Shrimp Creole with Spaghetti Squash

Ingredients

1 T coconut oil
1 Bunch Scallions
1 red bell pepper, chopped
1 green bell pepper, chopped
1 c thinly sliced celery
4 cloves garlic
28 oz can Muir Glen tomato sauce
1/2 t cayenne pepper
2 t fresh minced parsley
1 lb raw shrimp peeled and deveined
1 spaghetti squash, cooked and shredded
Tips
Directions
Saute veggies in large skillet with coconut oil until tender. Add tomato sauce, pepper and parsley; simmer uncovered over medium low heat for 20 minutes. Add shrimp and simmer covered for 15-20 minutes. Serve over spaghetti squash.
