Chicken Tomato Tortelloni Soup

Ingredients

    1 Tbsp Olive Oil
    3 cups Diced Tomatoes - No Salt Added
    4 cups Chicken Broth - Low Sodium
    1 pound Chicken Breast (diced, boneless/skinless)
    1 cup Celery, diced
    1 cup Carrots, chopped
    3 cups Kale, chopped
    1 cups Onions, chopped
    3 cloves Garlic, minced
    1 cup Red Pepper, chopped
    1/2 tsp Black Pepper
    1 tsp Thyme
    1 tsp Oregano
    400 grams Fresh Five Cheese Tortelloni

Directions

1. Heat oil in a large heavy bottomed pot. Add onion, celery, carrots and sauté until softened.
2. Add chicken and brown.
3. Add in tomatoes, broth and seasonings. Bring to a boil and reduce heat to low simmer and cook for 15 minutes to cook chicken through.
4. For the tortelloni: you can add it the last couple of minutes cooking (allow cooking time as package suggests) or do what I do which is cook it in a separate pot and put in bottom of bowl and pour soup over top (this allows me to keep it separate for left overs and the tortelloni doesn't soak up all the liquid).
