Ingredients

    2 tsp extra virgin olive oil
    2 garlic cloves, minced
    1" ginger root, grated
    juice of 1/2 lemon
    9 oz chicken breast
    1 1/2 cup red cabbage, thinly sliced
    1 1/2 cup red peppers (or mix) thinly sliced
    1 cup carrots, cut into thin strips
    1 cup broccoli florets, sliced into thin strips

Tips


Directions

Heat oil, garlic, ginger, and lemon in non-stick pan. Cook chicken in above mix until lightly browned. Add all veggies at once and stir fry for 5-10 more minutes until veggies are tender crisp and chicken is cooked through.
