Dump Salad

Number of Servings: 6

Ingredients

    2 cups fresh or one can peas, drained
    1 can bamboo shoots, drained and diced
    1 can water chestnuts, drained and diced
    1 cup mung spourts, chopped
    1/2 cup chopped mushrooms
    1 medium tomato, diced
    1/4 cup chopped onions
    1 TBS capers
    1/4 cup vinegar
    1/2 cup non-fat yogurt
    1 tsp horseradish (optional)
    seasonings to taste

Directions

Combine all ingredients and dump on a bed of greens. May be served immediately, but flavors will continue to blend if made ahead and chilled for a few hours.
