Spicy Balsamic Vinegarett- Blood Sugar Solution

    Dressing
    Juice of 1/2 lime
    2 tbsp balsamic vinegar
    1 garlic clove, minced
    1 tsp ground cumin
    1 tsp chili powder
    1⁄8 tsp cayenne pepper
    Sea salt and freshly ground black pepper
    2 tbsp extra-virgin olive oil




Directions

Make the dressing: In a small bowl whisk together the lime juice, balsamic vinegar, garlic, cumin, chili powder, cayenne, salt and pepper to taste. While whisking, slowly drizzle in the olive oil until it thickens slightly and emulsifies. Taste for seasoning and add more salt or black pepper if needed.
Assemble the salad: In a medium bowl combine the salmon, scallions, bell pepper, jalapeņo, cilantro and olives and toss until mixed well.
Pour half of the dressing over the salmon and vegetables and toss lightly. Add more dressing to taste. Any leftovers can be stored in the refrigerator for up to 2 days.
