Ingredients

*Tomatoes, red, ripe, raw, 12 Med
*Zuchini, 2 med diced
Green Peppers 1 large diced
3 hot peppers diced
Onions - red 1/2 cup, chopped
Green Onion 12 stalks
Garlic, 8 clove
1 can of tomato paste
1 tsp of salt
1/4 cup vinegar
5 tsp of corn starch
Tips
Do not touch lids until they have had time to cool and seal on their own.
I would define this as medium heat.
Directions
Dice all vegetable, add tomato paste, and salt; roast for 60 min at 400 degrees. Add 1/4 vinegar with 5 tsp of corn starch mixed into it and roast 10 more min. This helps thicken the salsa.
Pour into 250 ml mason jars, boil jars (water level just below the caps), for 20 min; remove from water, you will hear the seal snap as they start to cool.
