Introduction

Ingredients

    1/2 cup all purpose flour
    1/2 cup whole wheat flour
    1 cup natural bran
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    2 Tbs cocoa
    1/2 tsp spices (cinammin, clove, ginger) optional
    1/4 cup chopped nuts optional

    1/4 cup butter unsalted
    1/2 cup sugar
    2 eggs
    1/4 buttermilk (soured milk 1/4 milk with 1 tsp vinegar stir and let rest)
    mashed overrype banana about 3 medium

Directions

combine all dry ingredients in large bowl, make well in middle. preheat oven to 375F
using hand held mixer in another bowl cream butter and half of sugar add rest of sugar. add eggs one at a time mixing after each addition. add milk and mashed bananas mix thoroughly before adding to dry ingredients. Mix just to combine. do not overmix. fill greased muffin tins about 3/4 full. bake 15 min @ 375F remove from oven. muffins are done when they spring back from light touch or when tester(toothpick) inserted comes out clean. let rest in pan 1-2 min then remove and allow to cool thoroughly on a rack
