Ingredients

    This is with cheese only!!!
    1 head of cauliflower
    3 eggs...may need more if it doesn't stick together well
    2 tbls of oregano or italian seasoning
    16oz of cheese
    Garlic...depends on how much you like
    1 cup parmesan cheese
    ***i substitute the parmesan for ricotta sometimes...depends on what i have***
    Garlic salt...to your taste
    ***meat/veggies will need to be calculated separately for caloric intake***
    This recipe can make 1 rectangular large pizza...2 medium pizzas...or 4 small pizzas!!!

Tips

****Be sure to squeeze cauliflower in a kitchen towel to get rid of liquid!!!!!****


Directions

Cook cauliflower till just a little soft...drain...grate/rice/process...squeeze out...add eggs 1 at a time...add 8oz of mozzarella & all parmesan/ricotta...add garlic & oregano & garlic salt...mix well...pick up & see if a ball will stick together...bake at 450 for at least 15-20 mins until brown...may flip to be sure it's brown on both sides...take out add cheese & toppings (add up toppings to get correct nutritional facts)
I'm making one meatball, pepperoni, sausage & another chicken, bacon, onions...yum!!!
