Introduction

This beast carries me from 10am until 4pm - the heavies are the chick peas, cheddar, egg, and ham.
But on the healthy side it is packed with protien, Omega 3's and anti-oxidents.

Number of Servings: 2

Ingredients

    Celery, raw, 1 cup, diced
    Cucumber (peeled), 1 cup, pared, chopped
    Ham, regular (11% fat), 1 cup, diced
    Fresh Express - Double Carrots - 2 cups, 2 serving
    Flax Seed Meal (ground flax), 4 tbsp
    Chick Peas, 1 cup
    Radishes, 2 cup slices
    Beets, boiled, 1 cup slices
    Kale - Glory chopped kale, fresh, 2 cup
    Hard Boiled Egg, 2 cup, chopped
    Cheddar Cheese, 1 cup, shredded
    Chia Seed (Nutiva) 1 Tbsp, 2 tbsp
    Mushrooms, fresh, 1 cup, pieces or slices

Tips

To prevent salad goo, leave the chick peas, beets, flax meal, chia seed, ham,cheese and egg in seperate containers until ready to eat.


Directions

In a bowl blend all ingredients except chick peas, beets, cheese, flax meal, chia seeds, egg, ham and dressing.

Serving Size: Makes enough for 2 huge salads - but you can stretch it to 8 or more smaller salads.
