1/3 cup pineapple juice, no sugar added
2 tsp rice vinegar
1-1/2 tsp soy sauce
Dash each ground ginger and ground allspice
1 tsp cornstarch, dissolved in 2 tsp water
2 tbsp minced onion and leek
12 oz beef liver, cut into 1/4 inch thick slices
2 tsp chopped fresh parsley
salt and pepper
Spray nonstick skillet with nonstick cooking spray and heat. Saute onion-leek combo for a couple of minutes and then add liver, parsley and salt to taste. Saute until liver is browned and then add sauce and heat 1 min longer.
