Number of Servings: 8
Cook pasta according to directions.Drain and add sesame oil, mix thoroughly.
In a bowl combine rice vinegar, soy sauce, brown sugar, lime juice, hot sauce, and soy nut butter. Whisk together.
In a large skillet add Olive oil and heat. Add onions, garlic, carrots, snow peas, and cilantro. Cook to desired consistency. (My family like the veggies soft)
Combine pasta and vegetables, stir in vinegar mixture.
You can add tofu and bean sprouts too, if you like also.
If you do not have to worry about nut allergies you can add shaved peanuts on top when serving and replace soy nut butter with creamy peanut butter.
Serving Size: a little more than 1 cup
