Canadian Bacon, 12 slices
2C. Egg beaters
1 pkg of thawed chopped spinach, drained
1C Chedder cheese, shredded
salt and pepper to taste.
Mix egg, spinach and cheese.
Place 1 slice of bacon in each cupcake divit, then add a 1/2 C of the egg mixture.
Serve warm with Salsa
Serving Size: Makes 12 Breakfast cups, 2 cups per serviing
