Mean Green Black Bean Soup with Avocado Salsa

Ingredients

4 Cans Blackbeans
3 Cups Broth (Veggie or Chicken)
1 Can Rotel
1/4 Cup Fresh Cilantro (Chopped)
1 Tbl. Black Pepper (Ground)
2 Tbl. Extra Virgin Olive Oil
2 Lg. Sweet Yellow Onions (Chopped)
Avocado (3) Diced
Lime Juice 8 Tbl.
Directions
In medium sauce pan, Sautee 1 onion (Chopped) with olive oil, until lightly browned.
Combine onion with 2 cans drained black beans, 2 cups chicken broth, 1/2 can of Rotel, 2 Tbl. Lime juice, Fresh cracked Pepper in large pot over medium heat.
In separate bowl - combine 3 medium avocados (cubed), Half of Cliantro (chopped), 1/4 Can Rotel, 4 Tbl. Lime Juice, 1 sweet onion (chopped), fresh cracked pepper, salt to taste - stir well - set aside to chill in fridge.
In blender/mixer - Combine 1 1/2 cans black beans, 1 cup broth, 1/4 can Rotel, 2 Tbl. Lime, Half of chopped Cilantro - Blend until mixture becomes slightly chunky liquid. Then, Combine in pot with other ingredients, continue cooking over medium heat, stirring occasionally.
Take remaining 1/2 can of black beans & smash with fork, until lightly smashed (for texture). Add this to pot as well.
Simmer pot, until hot and remove from heat.
Serve Soup into bowls & scoop 1 Tbl. of Avocado Salsa to top - Enjoy!!
