Chicken and Vegetables

Ingredients

    2 tsp vegetable oil
    12 oz skinned and boned chicken, cut into 1-inch pieces
    2 cups sliced mushrooms
    1 cup diced zucchini
    3 tbsp diced red bell pepper
    salt to taste
    1 tsp chopped fresh parsley
    1 tsp lemon juice

Directions

Heat oil in skillet. Add chicken and saute over medium heat until cooked through and slightly browned. Remove chicken and keep warm. In same skillet combine mushrooms, zucchini, red pepper, and salt. Cover and cook over low heat, stirring occasionally, until vegetables are just tender. Add chicken, parsley, and lemon juice to vegetables. Toss and serve.
