Chicken Fajita 2 Egg Omelet with cheese pepper and onion

Ingredients

2 large fresh whole eggs
3 oz cooked (or frozen) chicken fajita meat
1/4 cup shredded cheese
1/3 cup chopped or sliced white onion
1/3 cup chopped or sliced green bell pepper
1 tbsp Olive Oil or Butter (for sauteed veggies)
Tips
Cooking omelets can sometimes be tricky when it comes to folding the egg over the filling ingredients. Sometimes it's easier to add the ingredients to one side of the omelet and fold over the other half.
Directions
1. Chop or slice onion and bell pepper
2. Heat pan with butter or olive oil
3. Saute onions and bell pepper until tender
4. Heat frozen fajita chicken meat in microwave for about 3 minutes
5. Beat eggs until they're smooth
6. Heat large skillet until medium hot (add non stick spray like Pam)
7. Pour in eggs and twirl slowly in pan until it is no longer in liquid form
8. Add cheese, onion, bell pepper and chicken in a row to the middle of egg
9. Fold over each side of the egg so that it covers the ingredients in the middle
10. Let cook for a little longer to melt the cheese (only for about 1 minute or so)
11. Remove from pan and serve
