Beans and Greens Tomato Stew

Introduction

Ingredients

    1 Tbsp. olive oil
    2 generous cups chopped leeks
    1 can (2 servings) artichokes
    1 can no salt Petite cut tomatoes
    1 can no salt turnip greens
    2 cups lentil sprouts (home sprouted, I used 1 cup black lentil sprouts, and 1 cup red lentil sprouts)
    .5 tsp. mcCormick Perfect Pinch Garlic and Herb Salt Free Seasoning.
    .5 tsp. black pepper
    6 cloves roasted garlic
    2 c. water.
    1 can cannellini beans, rinsed, and drained.

Directions

Heat skillet and add coconut oil and leeks.
Fry 5 minutes.
Open, rinse and drain artichokes and cannelini beans.
All ingredients except the cannellini beans. Cook for 15 minutes. Add the cannellini and cook for 10 minutes. Serve
