Vegan Apple Cinnamon Quinoa Breakfast Cookies



Introduction

I made these as a breakfast-on-the-go option for days when I jog to work in the morning or for a snack in the afternoons to stave off binges and get me through to my afternoon workout. Ingredients

    2 cups quinoa, cooked
    2 cups rolled oats
    1 cup brown rice flour
    1 medium apple, diced
    1 tbsp cinnamon
    0.5 tbsp nutmeg
    2 cups applesauce, unsweetened
    2 tbsp vanilla extract
    0.5 cup almond slices
    0.5 walnut pieces

Tips

If this seems to dry, add a little water or almond milk. Swap out the fruit and spices for chopped blueberries and strawberries and pair with a nice cup of Teeccino, tea or coffee for a healthy, delicious and lazy morning breakfast! If you really want to be decadent, then top these with almond butter.


Directions

1.Cook 1 cup of dry quinoa (makes 2 cups cooked) in 2 cups of water. Dice up apple and preheat oven to 375 degrees.

2.Mix together the quinoa, oats, flour, cinnamon, nutmeg, apple pieces, apple sauce and vanilla.

3. Drop dough on cookie sheets and use spoon to shape into circles. Top with the almonds and walnuts and bake for 20-25 minutes.

4. Let cookies stand for 10 minutes before transferring to the cookie rack to cool completely.

Serving Size: Makes 18-20 large cookies
