Introductioni'm no raw vegan, but i sure love this salad! i'm no raw vegan, but i sure love this salad!
1C mixed greens, chopped
1C baby spianch
1/2 handful seeds of your choice: sunflower, sesame, flax, etc. **
1/8 cucumber, sliced and halved
1/8 avocado, sliced
3 or 4 dry roasted almonds, chopped
1 sheet Nori seaweed (or other), cut into 1" squares
1/2 Tbsp extra virgin olive oil
Fresh (or dried if not available) mint leaves, parsley, basil, & coriander, about 1-2 sprigs each, chopped fine
Juice of 1 wedge lemon, 2 wedges lime
Salt & Pepper to taste
Sprinkle on nuts & seeds & raisins. Add spices.
Squeeze the juices into the bowl, then the oil.
Place another bowl over top & shake (not tossed). This will moisten all ingredients with the dressing and to blend the spices well.
Makes 1 large salad, or 2 starter salads.
If you are concerned with the high fat content, know that all ingredients are healthy sources of fats. When I want a "lighter" salad, I remove the seeds, use less or no oil (the juices are quite nice on their own), and use fewer almonds.
