Mexican Frittata

Introduction

This is a great recipe to make ahead and reheat. This is a great recipe to make ahead and reheat.
Number of Servings: 4

Ingredients

    Egg, fresh, 7 large
    Garlic, 1 tsp
    Milk, nonfat, .125 cup
    Corn Tortillas, 2 (6") cut in pieces
    Pork Sausage, 1 link (4" x 7/8") chopped
    Onions, raw, .5 cup, chopped
    Beans, black, .5 cup
    Yellow Sweet Corn, Frozen, 0.25 cup kernels
    Goat Cheese, Semisoft, 1 oz


Directions

Whisk the first three ingredients together. Then, stir in the tortillas. Meanwhile, saute the onions with the sausage in an oven safe pan. When it is almost cooked stir in the beans and corn. Pour the egg mixture over ingredients in the pan and loosely scramble but they should remain runny. Sprikle the cheese on top and put in the over for 10-13 minutes at 350. Remove when the top os lightly brown and it is fluffy. It will fall as it cools. Cut in four pieces and serve.
