Brussels Sprout Slaw

Ingredients

    1 lb Brussels sprouts
    3 carrots
    2 tbsp cider vinegar
    2 tbsp grey poupon mustard, or seeded mustard
    1 tbsp lemon juice
    3 tbsp maple syrup
    1/4 cup olive oil
    1/4 sunflower seeds (or other nuts)

Directions

Grate Brussels sprouts and carrots in food processor. Dump into a large bowl. In a smaller bowl, mix the dressing ingredients and then add the olive oil slowly. Pour over the veggies. Add nuts and stir.
