2 cups Chicken Broth, vegetable broth OR water
1 cup quinoa
2 cups frozen peas, thawed
1/4 cup diced onion
3 Tbsp EVOO
3 Tbsp red wine vinegar
1/2 cup chopped parsley
1/2 cup toasted chopped almonds
salt & pepper to taste
optional: dried fruits (1/4 cup)
Additional veggies such as cucumber, tomatoes, peppers, asparagus, mushrooms, broccoli, zucchini, carrots, green beans, corn, squash, pumpkin, sweet potato may be added along with or instead of peas - up to 4 cups veggies total.
Serving Size: 6 cups, 1 cup per serving
