Cannellini Salad

Introduction

A brightly colored, hearty salad that goes perfectly with any Italian meal. A brightly colored, hearty salad that goes perfectly with any Italian meal.
Number of Servings: 3

Ingredients

    1 can of cannellini beans
    1 medium tomato, chopped
    1 tbsp onion, chopped
    9 jumbo black olives
    6 romaine lettuce leaves
    1 tbsp lemon juice
    1 tsp salt

Tips

If you are watching your sodium intake, omit the salt. For even more Italian flavor, add a tablespoon of oregano.


Directions

Open and drain the beans. You might want to rinse them to get more of the salt off. Chop the tomato and the onion and toss them in with the beans. Add the lemon juice and salt. Allow the bean mixture to set for 10 to 20 minutes. Line three bowls with the lettuce leaves. Spoon the bean mixture into the bowl. Add three black olives to each bowl. Enjoy!
