Red Lentil Soup

Ingredients

1 large onion, chopped
1 3/4 c. split red lentils
7 1/2 c. water (could be chicken or veggie stock as well)
salt and pepper to taste
1 tsp. cumin
2 Tbls. lemon juice
Extra virgin olive oil to drizzle, to taste
Directions
combine onion, lentils and water in a pot, simmer till soft. Add salt, pepper, cumin and lemon juice. serve with extra lemon and olive oil and eat it how you like it...really yummy! (I said a serving was 1.25 cups)
