2 lbs extra lean ground turkey
1 can reduced sodium chicken broth
2 cans low sodium red kidney beans, drained and rinsed
1 anaheim chile
1 serrano pepper
1 medium onion
1/2 tbsp garlic powder
4 tsp cumin
1/4 cup chili powder
brown ground turkey. add finely diced onion (i put my onion in a food processor) and cook together for a minute or two. add chicken broth and spices. add the kidney beans and the chile and the pepper. simmer for about 90 minutes.
for an additional 80 calories, garnish with 1/4 cup 2% shredded sharp cheddar cheese.
