Low sodium vegetable broth

Introduction

A perfect way to recycle scraps! A perfect way to recycle scraps!
Number of Servings: 16

Ingredients

    Bell pepper caps with seeds
    Cabbage leaves and stems
    celery
    onion skins and not so great for cooking onions (not spoiled to the core-maybe dry)
    dry garlic cloves
    wrinkly sweet potatoes

Tips

Use this for your own vegetable stock to make some very delicious soups!


Directions

Retrieve your vegetable waste that you've collected and frozen.
Place in a very large pot and top with water.
Add salt.
Bring to a boil and let simmer for a couple hours.
Strain, let cool to room temperature, and freeze.

Serving Size: Makes 16 one cup servings once boiled down
