lite version... substitute 2 whole eggs with 2 egg whites lite version... substitute 2 whole eggs with 2 egg whites

Ingredients

    1 whole large egg
    2 large egg whites
    1/8th cup red onions
    1/4 cup bell peppers
    1/2 cup chopped mushrooms
    1/2 to 1 tsp minced garlic
    2 cups fresh spinach 1/4 cup 2% milk
    1 tsp olive oil

Directions

cook onions, peppers, shrooms in olive oil on med heat just until soft... add garlic cook 1 min longer. add spinach, when almost cooked down add eggs and scramble. top with ketchup
