IntroductionA great way to "trick" non-veggie eaters into having loads of veggies! A great way to "trick" non-veggie eaters into having loads of veggies!
1 lb ground turkey (or chicken breast) (Sometimes I just use 2 lbs of the veggie "beef" crumbles or tofu)
1 lb veggie "beef" crumbles
1 medium onion, diced
6 cloves minced garlic (can be less, we just love garlic!)
2 zucchini, sliced
2 yellow squash, sliced
1 red bell pepper sliced
1 whole tomato, sliced
2 cans Fire-Roasted tomatoes with garlic, basil and oregano
1 cup tomato sauce
rosemary, oregano, thyme, and other spices to taste (I just use whatever I have fresh!)
1 box rotini pasta (I used the "veggie pasta")
1 cup low-fat mozzarella
The cheese doesn't have to be added. Recipe freezes well.
Serving Size: Serves about 10-12
