Tuna pancakes

Introduction

Ingredients

    Flour, all purpose 1/2 cup
    Baking powder 1 tsp
    Egg, large 1
    Milk , skim 1/3 cup
    Olive Oil 2 tsp

    Tuna, low sodium in water 1 can, drained
    Onion, green or dried 2 tbsp
    Sweet pepper, chopped 2 tbsp
    Parsley, chopped 2 tbsp
    Ground pepper

    Yoghurt 1/4 cup
    Mayonnaise 2 tbsp
    Mustard, Bavarian sweet 1 tsp

Tips

You can use all the batter to make 6 tuna pancakes, but then you get twice the carbohydrates.


Directions

Preheat griddle on medium.
1. Combine flour and baking powder, add egg and mix, add oil and milk and mix.
1a. Use half the batter to make 3-4 pancakes. Cool and use later or freeze.
1b. Stir in tuna, onion, red pepper, ground pepper and parsley to remaining batter.
2. Drop batter on griddle, to make 4 pancakes.
3. When underside is golden, flip and cook until other side is done.
4. Mix yoghurt, mayonnaise and mustard until smooth.
5. Serve yoghurt mix with pancakes, on top or for dipping.

Serving Size: Serves 2. Makes 3 plain pancakes plus 4 tuna pancakes
