Low Carb Cole Slaw
Submitted by: TRIXIETEXASIntroduction
This is adapted from Dana Carpender's Low Carb Cole Slaw Recipe. I make it for everyone, low carb or not, and it's always a hit. I changed it from regular mustard to dijon (a BIG improvement in flavor) and from powdered Splenda to liquid sucralose. This is adapted from Dana Carpender's Low Carb Cole Slaw Recipe. Ingredients
-
1 bag of precut cole slaw (or you can cut it yourself using whichever blend of cabbage and carrots you prefer--leave out the carrots to reduce the carb count)
1/2 cup of Mayonnaise
1/2 cup of sour cream
1 TBSP of apple cider vinegar
1 tsp of dijon mustard
1-2 drops of liquid sucralose (you can use regular powdered Splenda but it adds another carb)
1/4 tsp of salt
Tips
Make at least a few hours, up to a day ahead. It tastes better if it sits for a little while for the cabbage to absorb the dressing.
Directions
Mix all ingredients but the veggies together with a whisk until smooth. Add the cabbage and mix until evenly coated with the dressing.
