Mexican Chicken Soup

Number of Servings: 8

Ingredients

    1 small bag of shredded carrots
    1 chopped onion
    1 can pureed tomatos
    1 can chicken broth
    2 tbsps of chicken better than bouillon
    12oz of fully cooked seasoned shredded chicken
    1 can fire roasted diced tomatos
    1 cup frozen corn
    1 can pinto beans
    2 tbsp of chopped garlic
    4 tbsp of garlic olive oil
    1 pkg taco seasonings

Tips

I used HEB seasoned cooked shredded chicken and some
Enchilada Baked Dip seasonings I got at a craft fair but I think Taco Seasonings would taste just as good.


Directions

Saute onion,garlic and carrots in olive oil
when tender add everything else and if the consistency
is too thick add some water and simmer for about 30min

Serving Size: about 8 cups
