Ingredients

1 pound ground beef
1 cup bulgar wheat (tabbouli wheat)
1 green pepper
1 onion
1 tsp each allspice and cinnamon
2 tsp salt
1/2 tsp pepper
1/2 cup (or less) olive oil
Directions
A food processor is necessary for this dish.
Place the tabbouli wheat in a medium bowl, cover with a generous amount of water and stir; set aside.
Cut onion and green pepper into large pieces and place in food processor; process until almost pureed. Add ground beef, spices and salt to processor and process on high speed until paste-like and uniform consistency.
Drain the wheat that was in the bowl, squeeze out the water by pressing it with your hand but don't worry if you don't get all the water out. Add this to the processor and continue to process until paste-like. If your processor is too small, do this in two batches.
Press the meat mixture into the bottom of a 13 x 9" baking pan. With a knife, cut diamond shapes into the meat by cutting straight lines one direction and diagonal lines the other direction. If you like, you can place one almond half or sliver into the middle of each diamond.
Pour olive oil over the meat, allowing it to ooze through your cuts and tilting the pan to distribute the oil evenly. To make this dish with less calories, you can decrease the oil, but the dish will be softer and not as flavorful
Bake in a 350 oven for 1 hour. Makes 12 3x3" square servings.
Leftovers can be served warm or cold. My kids and I like to roll pieces of Kibbi in Pita bread with ketchup and it tastes a bit like hamburgers.
