Introduction

Great low cal cornbread muffins Great low cal cornbread muffins
Number of Servings: 1

Ingredients

    1/4 C of granulated sugar
    1 Cup cornmeal
    1/2 tsp salt
    1 cup low fat buttermilk
    1/4 C eggbeaters
    1.5 Tbsp I can't believe it's not butter
    1/4 C canned green chili (1 small can)
    4 Tbsp Chili powder
    1 clove of garlic (ok to use powdered)
    3 tsp baking powder

Directions

Combine cornmeal, salt and baking powder in small bowl. Set aside. Melt butter. In another bowl combine remaining ingredients and mix. Add dry ingredients and mix. Add green chilis and stir. Pour mixture into greased muffin tin. Bake 20 minutes at 350.

Serving Size: 12 muffins
