Veggie Quiche

Number of Servings: 6


    3/4 cup egg beaters
    3/4 cup reduced fat cheddar cheese
    1 box frozen chopped spinach
    1/4 cup chopped green pepper
    1/4 cup chopped onion


These can be frozen and reheated in microwave.


Microwave spinach for 2 1/2 minutes, drain off access water. Mix all ingredients. Spray muffin tin or use muffin liners. Pour equal amounts into muffin tin. Bake at 350 for 20 minutes or until center comes out clean when testing with fork.

Serving Size: 1 muffin size or 1/6 of muffins made
