Spinach, Asiago, and Roasted Red Pepper Quiche

Introduction

Ingredients

    1 package of frozen spinach (10 oz), thawed and drained well
    1 large tomato, thinly sliced
    1 Tbsp finely chopped roasted red bell pepper from jar
    1 clove of garlic, chopped
    5 large eggs
    3/4 cup of skim milk
    1/2 cup of grated asiago cheese, 1 Tbsp reserved
    1 frozen ready-to-use pie crust
    1/2 Tsp Salt
    Black Pepper to taste
    Nutmeg to taste

Tips

You can substitute any cheese for asiago. Goat cheese and swiss cheese were also delicious in this recipe.

I serve with a side of turkey sausage and fruit salad for a nice breakfast, brunch, or dinner.

Directions

Preheat oven to 350 degrees.

Pull frozen pie crust out of the freezer and allow to sit at room temperature for 10 minutes.

Meanwhile, beat eggs, milk, salt, pepper, and nutmeg until light and fluffy. Add in spinach, roasted red pepper, garlic, and asiago cheese. Mix until well blended.

Pour the mixture into the pie crust. Layer the sliced tomatoes on top of the pie and sprinkle with the reserved asiago cheese.

Bake for about 45 minutes until set. Allow to rest at room temperature 5 to 10 minutes before serving.

Serving Size: Make 1 whole quiche - 6 to 8 servings
