Introduction

Number of Servings: 8

Ingredients

    2 Chicken breasts, sliced thin
    salt, pepper, 1 tsp sesame oil to season chicken
    1/2 med Onion, chopped
    1/2 med Bell Pepper, sliced
    3 cups partially cooked Broccoli florets
    16 oz Udon Noodles, boiled 8-11 min
    2 Scallions, sliced

    sauce:
    6 Tbsp soy sauce
    5 Tbsp mirin
    1 Tbsp worcestershire sauce
    1 Tbsp ketchup
    1 Tbsp brown sugar
    3/4 Tbsp rice vinegar
    1/2 tsp powdered ginger
    1/4 tsp sriracha
    4 cloves garlic, minced

Tips

Can reduce chicken to 1 chicken breast, can try substituting udon noodles with fetuccine or spaghetti or try different veggie combos.


Directions

Mix sauce ingredients, add 2 Tbsp sauce to chicken, massage 1 min. Heat 2 Tbsp oilve oil in a large skillet or wok over med high heat, add chicken and onion, cook 3 min until chicken is no longer pink on the outside, add bell peppers and broccoli. Carefully add the cooked noodles to the pan and slowly add the sauce, stirring as you go. Cook for 5 min, stirring, then top with sliced scallions.

Serving Size: makes 8 1-cup servings
