Quick Carrot Chicken Soup

Number of Servings: 8

Ingredients

    1 can canned Kirkland chicken, drained
    1/2 large onion, shredded
    6-7 large carrots, shredded
    6-8 c chicken stock (homemade is best!)
    3/4 t salt
    1/2 t pepper
    1 T olive oil

Directions

Saute the carrots and onion in olive oil until soft. Add the chicken stock and bring to a simmer. Puree. Add the salt and pepper and stir. Mash the canned chicken then add to the soup and serve.

Serving Size: Makes 8 1 1/2 c servings
