Susie's homemade pasta and cheese casserole

Ingredients

    16 oz. penne pasta

    1 c. 2% milk
    1/2 c. flour
    1 c. cheddar cheese
    1/2 c. margarine melted


Tips

May make without panchetta if desired.

Directions

Cook pasta for 11 minutes and drain; make roux in a saucepan of flour, melted margarine, and milk. Cook roux until smooth stirring constantly. Add 1 c cheese to roux. Add frozen peas (thawed) to roux. Add panchetta which has been diced to roux. Mix pasta with roux and pour into 13 x 9 casserole sprayed with cooking spray. Put cheese on top. May add paprika on top if desired to help brown. Bake at 350 for 25-30 minutes.
