Double Choc Baked Oatmeal

Introduction

A healthier chocolate treat for times when the cravings take over. I cut it into bar sized portions and eat alone. Number of Servings: 8

Ingredients

    3 cups of rolled oats
    1/2 cup light muscovado sugar
    2 tbsp unsweetened cocoa powder
    2 eggs
    1 banana mashed
    1 cup milk (full fat used in recipe)
    2 tsp baking powder
    1 tsp vanilla extract
    90 - 100g dark chocolate chips
    Good pinch of salt

Directions

1. Preheat oven to 350/gas mark 4 and oil a square baking tray with spray oil
2. Mix all dry ingredients in large bowl until well combined.
3. In a separate bowl whisk eggs with the milk. Add the vanilla and banana. Tip into the bowl of dry ingredients and combine.
4. Pour into the baking tray and flatten with a spatula. Bake for 30 - 35 mins until toothpick comes out clean.


Serving Size: Nutritional info for 8 servings, can be cut into smaller servings as you like.
