Whole Wheat Banana Bread

Introduction

I have been playing around with banana bread recipes for awhile especially since it is one of my family's favorite snacks. This is made in a 13" x 9" pan to last us a couple days and freeze the extra. I have been playing around with banana bread recipes for awhile especially since it is one of my family's favorite snacks. This is made in a 13" x 9" pan to last us a couple days and freeze the extra.
Number of Servings: 20

Ingredients

    2 cups whole wheat flour
    7 bananas
    4 egg whites
    2 tbsp skim milk
    1.5 cup sugar
    2 tsp baking powder
    1.5 tsp baking soda
    1.5 tsp cinnamon
    8 tbsp butter

Tips

Do not over mix the batter after you pour in the ingredients because the bread my fall when done or not want to come out of the pan easily.


Directions

Preheat oven to 350*F and lightly spray a 13" x 9" pan with low cal cooking spray and set aside. In large mixing bowl cream sugar and butter together. In seperate bowl mash bananas and milk together. In another bowl combine all the dry ingredients. Once sugar and butter are combined slowly add in the egg whites. After egg whites are combined add in the bananas and milk mixture. After that is all mixed in add in the dry ingredients using a wooden spoon or a spoonula to mix until dry ingredients have disapeared. Empty mixture into baking dish and bake for 1 hour 10 mins to 1 hour 15 mins depending on if still runny in the middle when you stick a knife or toothpick in to check it. Let cool on rack or in the pan and enjoy.

Serving Size: 20-24 slices depending on how big of size you want.
