IntroductionThis is really easy to make and tastes great. This is really easy to make and tastes great.
2 lbs carrots - washed, unpeeled, chopped into rounds
1 cup reduced fat sour cream
1.25 litres (about 32oz) of Chicken broth (or vegetable broth)
(add spices to your taste preference)
Remove from heat, blend carrot and broth together in blender or food processor until smooth.
Return carrot/broth to pot and let cool uncovered about 15 minutes. Stirring occasionally.
Stir in sour cream a little bit at a time until it's all blended through.
Add spices to taste.
Garnish with fresh chives.
Serving Size: Makes about 6 1-cup servings
