Asparagus Soup

Ingredients

    1/2 pound asparagus spears
    1 tbsp light margarine
    1 tbsp enriched flour
    2 cups water, heated
    3/4 tsp salt
    Dash each ground nutmeg and white pepper

Directions

Cut asparagus into 1-inch pieces; reserve tips and set aside. Melt margarine in saucepan. Stir in flour and cook over low heat, stirring constantly, for 3 min. Remove from heat; gradually add heated water, stirring constantly. Return to heat; add asparagus (not including tips) and salt. Bring mixture to a boil over high heat. Reduce heat to moderate, cover, and cook 20 minutes or until asparagus is tender. Pour mixture, 1/2 at a time, into blender container and process until smooth. Return to saucepan. Add reserved asparagus tips, nutmeg, and pepper; simmer 5 minutes or until tips are tender.
