Baked Pumpkin Oatmeal

Introduction

Ingredients

    1 c. quaker oats
    1/2 c. canned pumpkin
    1/2 c. vanilla almond milk
    1/2 tsp vanilla extract
    1 tbsp cinnamon
    1/8 tsp salt
    1-1.5 tbsp brown sugar

Tips

I prefer to omit the brown sugar from the recipe and sprinkle on top after baking instead


Directions

Pour into two 1/2-cup ramekins. Cook for 20 minutes or more. Finally, set your oven to “high broil” for 3 more minutes (or simply just bake longer, but broiling gives it a nice crust).
