Potatoe Soup

Ingredients

    Potatoes Diced 5 medium
    Chopped Onions 1 Cup
    Fat Free Milk 2 Cups
    Chicken Broth 2 Cups
    Carrots Diced 1 cup
    Black Pepper 1 tsp or to taste
    Salt 1 tsp or to taste
    Olive Oil 1 tbsp

Directions

Saute the onions in the olive oil until clear. Add the potatoes (leave peel on if desired) and carrots to the onions with the Chicken Broth, Pepper and Salt. Simmer for about 25 minutes or until potatoes are tender. Add the fat free milk and heat to just below a boil. Use a potato masher to mash up the potatoes to desired texture, or use a had help blender if smoother texture is desired.
