Tomato, Garlic and Basil Chicken WrapSubmitted by: SDUNKIN
-5 Mission Flour Tortillas, burrito size (or any tortilla of your choice-for smaller size tortillas, you will need to use less filling).
-5 chicken breasts (skinless, boneless), cut up into cubes or strips
-McCormicks Grill Mates Tomato, Garlic & Basil Marinade, 5 tbsp (half of package)
-1/8 cup olive oil
-1/8 cup water
-1 tbsp balsamic vinegar
-2 cups fresh spinach leaves
-2 plum tomatoes, sliced
-1 1/2 cups mushrooms (portabella or baby bella)
-If desired, you can saute the mushrooms in a little bit of olive oil for a few minutes at this point.
-Heat flour tortillas on griddle or skillet for about 15 seconds per side over low-medium heat
-Place warmed tortillas on a plate. Line with spinach leaves and tomatoes, then add cooked chicken and mushrooms (or fresh mushrooms if you didn't saute them).
-wrap tortilla and place seam side down in griddle or skillet and heat until the tortilla becomes slightly crispy and stays closed.
-makes 5 servings
-you can add or delete filling ingredients to your taste (add more mushrooms, use lettuce instead of spinach, etc)
-great for lunch or served for dinner with a side salad.
