Ingredients

1 boneless, skinless chicken breast (4 oz)
2 cans hominy
1 can ranch style beans
1 can petite tomatoes, w/ garlic and oregano
1 4-oz can chopped green chiles
4 cups chicken broth, fat free, low sodium
1 tsp. chili powder
1/4 tsp. oregano
1/4 tsp. ground black pepper
8 corn tortillas (optional)
Tips
May use canned products with less sodium. May substitute petite tomatoes w/ green chilies.
Directions
Cut with chicken breast into small pieces.
Lightly coat pan with cooking spray.
Saute the chicken until no longer pink on the outside.
Add the rest of the ingredients.
Simmer for 30 minutes or longer.
Cut a corn tortilla into strips and place in the bottom of the bowl and pour the soup over it.
Serving Size: makes 8 1.5-cup servings
