Introduction

I found this recipe on Elana's Pantry website. Initially, I made this recipes as a loaf (original recipes) and it did not turn out so well. Next time I made it as muffins, and they were a hit with my family. I love this recipe. I found this recipe on Elana's Pantry website. Number of Servings: 11

Ingredients

    Banana, fresh, 3 medium
    Egg, fresh, 3 large
    Vanilla Extract, 1 tbsp
    Honey, 1 tbsp
    Coconut Oil, 0.25 cup
    Almond Flour - Bob's Red Mill, 2 cup
    Salt, 0.5 tsp
    Baking Soda, 1 tsp

    muffin paper cups

Directions

1. Place bananas, eggs, vanilla, honey and shortening in a food processor.
2. Pulse ingredients together.
3. Pulse in almond flour, salt and baking soda.
The dough will be thick.
Scoop batter into muffin baking pan lined with paper cups. This dough sticks and does not come off well. So, I would strongly recommend using muffin paper cups.
Bake at 350 for 25 minutes but start checking at about 20 min. The muffins should be brownish on top.
Remove from oven and allow to cool


Serving Size: about 11 or 12 muffins (depending on their size)
