Introduction

Easy way to make your own healthy granola bars! Easy way to make your own healthy granola bars!
Number of Servings: 12

Ingredients

    2 cups old fashioned oats
    1cup shredded coconut (optional)
    1 cup sliced almonds (optional)
    3 TBSP unsalted butter
    1/2-3/4 cup honey (for nutritional info I used 1/2. C)
    1/4 cup loosely packed light brown sugar
    1.5 tsp vanilla
    1/4 tsp salt

    Fruit add ins-
    You can use any dried fruits you like
    Example- 1/2 chopped pitted dates
    1/2 cup dried apricots
    1/2 cup craisins
    I only had raisins on hand so I used 3/4 cup raisins

    *You can also add 1 cup sliced almonds if desired

    ** The nutritional info is based on using 1 cup organic unsweetened flaked coconut and 3/4 cup raisins because that is what I had on hand

Tips

If you try to cut the bars while they are still warm they fall apart easily.

Directions

Preheat oven to 350 degrees F
Line a 8"x12" baking dish with parchment paper
Toss oatmeal, almonds, and coconut together on a sheet pan and bake 10-12 min, stirring occasionaly until ligjtly browned.
Transfer to a large mixing bowl and reduce oven temp to 300 degrees.
Place butter, honey, brown sugar, vanilla, and salt in a small saucepan and bring to a boil over medium heat. Cook and stir for a minute. Pour over the toasted oatmeal mixture.
Add in the fruit of choice and stir well until everything is coated.
Pour the mixture into prepared baking pan.
With wet fingers lightly press mixture evenly into pan. Bake 25-30 min until light golden brown.
Cool at least 2-3 hours before cutting into 12 squares.
Serve at room temp.
