Chicken Stuffed Green Peppers

Introduction

Ingredients

    4 Green bell peppers
    16 oz Ground chicken
    2 Sweet red peppers chopped
    1 large egg
    1 tsp salt (optional or to taste)
    1/4 tsp ground black pepper

Tips

you can add 1 cup of minute rice to the chicken mixture to absorb extra moisture if you don't mind the additional carbs and calories


Directions

Preheat oven to 400 degrees.
Cut the top out of the green peppers and remove core and seeds. in a large bowl mix all other ingredients thoroughly. Stuff peppers with mixture. arrange peppers in a 9x9 baking dish. Cover with foil and cook for 30 minutes. Remove foil and cook for an additional 20 minutes. serve hot.

Serving Size: makes 4 servings (each serving is 1 pepper)
