Introduction

I havent tried this yet but it sounded good for a low carb meal with the Chicken Stuffed Poblano Peppers. I havent tried this yet but it sounded good for a low carb meal with the Chicken Stuffed Poblano Peppers.
Number of Servings: 4

Ingredients

    1 Cucumber, diced
    1 Cup Sweet Corn
    2 Cups Diced Tomatoes
    1/2 Cup Green Peppers
    1/2 Cup Red Peppers
    1 1/3 Tbsp White Wine Vinegar
    1 tsp Red Pepper Flakes
    1 Clove Garlic
    1/2 tsp Cumin
    1/2 Cup Fresh Cilantro
    Salt and Pepper to taste

Directions

Mix all ingredients together and chill for an hour before serving.
