Corn & Tomato Broth

Ingredients

    1 T extra virgin olive oil
    1/2 c chopped onion
    1 clove garlic, minced
    1 1/2 c corn kernels
    2 large tomatoes, chopped
    4 c chicken broth
    Salt
    Red pepper flakes
    Juice of a lime
    Cilantro

Directions

In medium saucepan, heat the oil; add the onion and garlic. Add 1/2 t salt, stir, turn on low and cover. Let simmer 5 minutes. Chop the tomatoes (you can remove peel and seeds if desired). Add the tomatoes, stir, cover and simmer 5 minutes. Add the chicken broth, turn heat to high; bring to a boil. Turn the heat down again and let simmer about 10 minutes. Remove from heat; add salt and red pepper flakes to taste, as well as the juice of a lime and chopped cilantro.

Makes 4 2-cup servings.
